Over the past few weeks I've been sharing more vegetarian recipes on my Snap Chat (@MommyinMKE) and Instagram. We decided a bit ago to start a more vegetarian diet and right now we're at about 90% with fish and chicken as our meat choices. And since then I've had so much fun creating new recipes! This chickpea recipe that I'm sharing today has become a rotational favorite. I love how satisfying and tasty it is. It's also fairly easy to make! I really believe that the fresher the ingredients the tastier the meal. I made this recipe using all of my ingredients from my latest Door to Door Organics box.
