Hearty Beef Stew




I have a list of comfort foods that bring me back to when I was a little girl. And this beef stew is one of them. My mom made a variation of this and she always served it with a side of white rice. 

The fun part about recipes is that you can make it your own! I had a crockpot that we received for a wedding gift that I recently started using and I figured this would be a great recipe to try in there!

This recipe turned out delicious and the beef was so tender and the veggies were delicious as well. Warning, however, this is a labor of love and it will take about 8 hours to make it on the low setting. Perfect recipe for a cold winter day!

 Ingredients:

1 celery heart chopped
4 whole carrots chopped
4 medium red potatoes chopped
1/2 tbsp minced garlic
1 lb beef cut into cubes (my grocer had these pre-cut for me)
1/2 white onion chopped 
1/2 cup beer (for tenderizing)
salt & tellicherry pepper to taste
2 cups beef stock
1/4 cup unbleached flour
2 dry bay leaves


To make:

Place beef into the crockpot, season with salt and pepper, minced garlic and cover with flour. Then place chopped veggies, potatoes and bay leaves on top. Pour beef stock and beer. Set the crockpot on low (for about 8 hours) and you're all set. This recipe is absolutely yum and it's one of the stews that tastes even better as a leftover :) (Make sure to mix it  a couple of times as it cooks). 

** Helpful tip**: The crockpot heat settings may vary. Check the manual to see the temp of the Low setting on your crockpot- you don't want to overcook the meat! Check the stew throughout and once you can shred the beef- it is done.

  1. This looks easy and yummy especially with the cooler temp! I'm not a cook but tried making something very similar off a friends receive and liked it but ill try yours too. I didn't know about using the beer for tenderizing so I'll do this. Thanks :)
