I figured I should share my last pasta dish on here vs. my IG since the details are a bit longer for a caption, after a few of you asked for the recipe :)

You will need:
two chicken breasts cut in squares
two handfuls of baby spinach
12 oz Rigatoni pasta
1 cup chopped chives
1/2 cup bread crumbs
salt & pepper to taste
1tsp onion powder
one large tomato chopped
2 tbsp olive oil
3 tbsp lemon juice
To make:
Prepare pasta, drain and set aside. Add one tbsp of olive oil to medium hot pan and lightly saute the chopped tomato and chives. You don't want them to be overcooked I like to make sure the chives are still green instead of olive. It'll be about 3 minutes or so then remove them from the pan and set aside. Leave the pan on so that it maintains heat for the next step.
After you have thawed the chicken cut it in squares and add the onion powder, salt, pepper and breadcrumbs. Mix it all together with your hands and season. Add one tbsp olive oil to pan and add the chicken. Because the chicken is cut into squares it'll cook a lot faster. And once you add the pasta and other veggies it'll cook completely. After you see that the chicken is almost fully cooked, add one tbsp lemon juice to the chicken stir it a bit then add the pasta, chives & tomatoes you set aside. Mix it all together and finally add the baby spinach. I like to add these last so that they do not overcook. You still want to have them wilt bit save their vitamin goodness! Lastly, add the last bit of lemon juice, mix and enjoy! This should serve about 4-6 people or enough for lunch the next day :)
