I hope your Labor Day weekend was amazing and long! I'll be posting some pics of ours in a separate post :)
This weekend I altered an old banana bread recipe I had and in turn made the most moist banana bread ever! It was fanatastic I could live off this stuff! It was also pretty easy to make- win win!
Hope you love it as much as we have!
Ingredients:
1 - 9x5 inch loaf
1/2 cup butter (softened)
1 cup Raw Sugar
2 eggs (I used caged-free vegetarian)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Honey Greek Yogurt
1/2 cup chopped walnuts
1/2 cup craisins
3 medium bananas mashed
To Bake:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl cream together the butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Fold in the greek yogurt, walnuts, cranberries and bananas. Spread evenly into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
Enjoy!
Abrazos,
