This dish is perfect for a brunch, it's full of great fresh ingredients and is completely vegetarian. I cheated, however, and added chopped pancetta :D It was delicious, and such a beautifully colorful dish. Honey bun loved it and so did Gabriel! This is the type of dish where you can add different types of veggies, and maybe even bacon.

Ingredients
1/3 cup olive oil, plus more for dish
2 1/4 lb zucchini, in 1/4 in slices
salt and pepper (if you add pancetta use less- it is already salty)
1/3 cup long grain rice
2 onions, thinly sliced
3 garlic cloves, finely chopped
leaves from 5-7 flat-leaf parsley sprigs, finely chopped
2 oz Parmesan cheese, grated 1/2 cup
3 eggs
Prepare the Zucchini
1. Heat one-third of the oil in a large frying pan. Add the zucchini, salt, and pepper, and cook over medium heat, stirring occasionally, for 10-15 minutes until tender and evenly browned. Spread over a large tray to cool.
Prepare the remaining ingredients
2. Bring a saucepan of salted water to a boil, add the rice, and bring back to a boil. Simmer for 10-12 minutes, until just tender, stirring once or twice. Drain the rice in a colander, rinse with cold water to remove some starch, and drain again thoroughly. Let the rice cool for 8-10 minutes, then stir with a fork to separate with the grains.
3. Heat half the remaining oil in the frying pan, add the onions and garlic, and cook over medium heat, stirring occasionally, for 3-5 minutes, until soft but not browned. After I browned it I removed it from the pan and placed the pancetta in the pan until it was lightly browned.
4. Preheat the oven to 350 F Brush a 2 quart baking dish with oil. Coarsely chop the cooled zucchini.
5. In a large bowl combine the zucchini, onion mixture, parsley, rice, and Parmesan (pancetta if you want). Stir to mix, then taste for seasoning. Crack the eggs into a bowl and beat to mix. Stir them into the vegetable mixture with the wooden spoon.
6. Spread the mixture in the baking dish, and sprinkle with the remaining oil. Bake the tian in the heated oven for 10-15minutes, until set. Increase the oven temperature too 400 F, and bake for 10-15 minutes longer, until brown. Serve hot, or at room temperature, from the baking dish.
